- 1 chicken (whole, cut into portions, skin removed)
- 1 tsp lemon juice
- 1 onion (chopped)
- 250 g mushrooms (shitake, dried)
- 1 tsp capers
- 2 cloves garlic (crushed)
- 250 g tomatoes (cherry)
- ½ cup olives (kalamata, pitted)
- ½ cup basil (fresh) (leaves, torn)
- 1 tbsp oil/fat
- STEP 1: Add all ingredients to an oven proof baking dish with a lid.
- STEP 2: Bake at 200ºC for 40 mins.
