Ginger & Garlic Beef & Broccoli Stir Fry

Ingredients
  • 500g beef
  • 6 cloves garlic (crushed)
  • 2 tbsp fresh ginger (minced)
  • 2 capsicum (sliced)
  • 1 bunch broccoli (chopped into florets)
  • 1 cup sugar snap peas
  • 2 spring onions (chopped)

MARINADE

  • 1 tsp fish sauce
  • 1 tbsp sesame oil
  • 1 tbsp coconut aminos
  • 1 tsp white pepper
  • 1 tsp garlic powder
  • ½ tsp salt

STIR FRY SAUCE

  • 1 tsp coconut aminos
  • 1 tsp fish sauce
  • ½ cup water
  • 1 tsp chicken stock (powder)
Method
  • STEP 1: Put all the marinade ingredients in a bowl and combine thoroughly.
  • STEP 2: Place your beef (cut into strips) in the marinade bowl and coat completely with marinade. Set aside for 20 minutes for the meat to marinade.
  • STEP 3: While you are waiting for the meat to marinade, chop all your vegetables (capsicum, broccoli, sugar snap peas & spring onions).
  • STEP 4: When the meat has finished marinading, heat a wok to medium-high heat and cook the beef until cooked through. Remove and set aside.
  • STEP 5: Add 2 tablespoons of oil to the wok or large skillet on to medium-high heat. Add the garlic and ginger for 1 minute until fragrant.
  • STEP 6: At 1 minute intervals add in the broccoli, capsicum and sugar snap peas. Cook this mixture no longer than 4 minutes.
  • STEP 7: Add the beef back into the wok with your stir fry sauce.
  • STEP 8: Cook until the vegetables are just barely cooked and remove from heat. Stir in the chopped spring onion.
  • STEP 9: Season to taste and serve.
